Thomas Bühner is one of the most awarded and appreciated German Chefs for over 20 years and one of the Chefs awarded with 3 Michelin stars. Thomas also received the ‘Chef of the Year’ award by Gault&Millau, ‘Grand Chef’ with Relais & Chateaux, and his Restaurant La Vie from Osnabrück was a member of ‘Les Grandes Tables du Monde’ starting 2010.
FORO: What was your biggest challenge in the hospitality industry?
Chef Thomas Buhner: Working in the hospitality industry has always been difficult because most businesses generate minimal profit.The biggest challenge at the moment is to hold out economically, to stand by the employees, not to have to fire you, and to have a concept after or after a crisis that can continue despite the changed circumstances.
FORO: How did the authorities in your country react to help those in the hospitality industry?
Chef Thomas Buhner: In Germany hotels and restaurants are still closed, but there are many signs that the beginning of May will change. As of today, the VAT on restaurants has been reduced from 19% to 07%. I think that’s a very good and important step.
FORO: What do you think we have learned from this crisis experience so far?
Chef Thomas Buhner: Solidarity, it is the most important and I hope that it remains sustainable.
